Creation and Evaluation of Innovative Food Science Education Solutions
Our lab applies and evaluates innovative instructional technologies and strategies in food science and food safety education and training applications. We apply virtual reality, 360-degree still image and videos, e-learning software, and interactive videos technologies. Our projects are grounded in the constructivism (case-based, situated learning and problem-based learning) and behaviorism (direct instruction and programmed instruction) learning theories; and our evaluations are based on the Integrated Behavioral Model. Our vision is to improve the skills and behaviors of professionals in the food industry.
